A natural nurturer - Laura Wheeler grows organic foods

For Laura and her family, the path to healthy living begins in the garden—a source of nutrition and emotional well-being. Roses, sweet peas, and other blooms adorn the Wheeler home indoors and out, and garden-fresh vegetables are always on the menu.

"I love eating vegetables and herbs the same day that we pick them," says Laura. "Growing our own organic food brings us close to the process and yields the freshest quality. People have no idea how good produce can be.

The mother of three daughters, Laura feels that gardening keeps her family deeply in touch with the natural world. "I'm pleased that our daughters are passionate about the environment they live in. The garden has given our family a very wholesome experience, whether it is from good nutrition or the beauty of nature."

A dedicated organic gardener, Laura Wheeler prepares deliciously simple dishes with fresh produce that her family picks just before eating. "I like to pick vegetables when they're young," she says. "They're tasty, look great, and vitamins are at their fullest." Try these garden-fresh ideas:

Recipe #1: Grilled Vegetables

Grilled vegetables are a family favorite at Laura's home. Follow these instructions for a garden-fresh version of this tastey dish:

  • Slice your favorite vegetables into large sections. Great options include summer squash, bell pepper, onion, tomatoes, and mushrooms
  • Marinade the vegetabgles in olive oil, pepper, fresh herbs, garlic, and salt to taste for 15-20 minutes
  • Place each vegetable piece directly on the grill grid to cook
  • Turn vegetables often and brush with marinate to keep moist

Tip: If you'd rather prepare your grilled veggies on skewers, soak the skewers in cold water for an hour prior to preparation. This prevents wooden skewers from smoking for sticking to the grill.

Recipe #2: Green Salad

For a refreshing take on a green salad, prepare this unique dish:

  • Combine your favorite types of lettuce in a large bowl. Romaine, spinach, swiss chard, and arugula all work well
  • Add fresh pear, strawberry slices, pine nuts, and crumbled feta cheese
  • Toss in a light raspberry vinaigrette dressing and chill before serving
